La Cena: Farm Dinner

La Cena is an intimate four-course dinner exploring nourishment & sustainability through seasonal vegetables from Yappy Dog Farm, plant medicine and herbal teas from La Guadalupe Yerberia, and a four-course meal by Sentli featuring whole-animal cooking and locally & sustainably sourced ingredients. 

This gathering takes place at Yappy Dog Farm, a two-acre farm flower & vegetable farm in Albuquerque’s South Valley. The event will include a farm tour, stories and teachings woven into each course and pairing, local music, as well as small gifts from the evening to bring home.

Menu:

  • Each course includes herbal tinctures and tea pairings by La Guadalupe Yerbería

  • Fried chicken gizzards, potato nest, field greens, spicy fermented chintextle aioli, fried pasilla chilies

  • Beef tendon chicharrón, fideo seco, local braised beans, crema, crumbled cheese.

  • Crispy intestine, preserved lemon, garlic confit, fresh herbs, brown butter guajillo sauce, hand-made tortilla (heirloom local & organic NM corn)

  • Potato pavé with smoked beef tongue, house mole, sautéed seasonal greens & vegetables

  • Sweet seasonal tamale

Due to the nature of this particular dinner, we will be unable to accommodate vegan & vegetarian diets.
